Adopting a Cat.?

I want to adopt a cat at a local shelter I went to today. There are about 4 cats that I am deciding between and have a few questions. I really like Maine Coons and they have a few of them. My dad used to have one and the shelter has a female that reminds me exactly of her....in looks though, not personality. She was abused when she was younger (she is 4 yrs old now) and seems very shy and protective. When I put my hands near her she would be playful but bite also. I am not sure she would do well with other people. Can Cats change over time with a new owner and become more outgoing? I live by myself with no other animals but do have friends over now and then. There are other cats available that are extremely friendly, but they are not the type of Cat I am looking for. This is the URL for adoption agency.
